You like to buy fresh herbs but find that they wither and brown too quickly? Freeze them in portions! We've already given you this tip, but here's a smarter one: freeze your herbs in oil.
Here’s how to do it
- Choose “hard” herbs such as rosemary, sage, thyme and oregano. They react best to freezing; “soft” herbs such as mint, basil and dill are less suitable and it is better to use them fresh.
- You may decide to chop your herbs beforehand, cut them, or leave them whole in the cubes. You can also combine the different methods.
- Pour extra virgin olive oil or melted butter into the ice cube shapes in which you have placed your herbs. Oil is really what we prefer.
- Cover with cling film and put in the freezer overnight. The next day, unmould the cubes and store them in a freezer bag (label them, it's more practical!)
- Use one or two cubes to prepare soups, stews, sauces and more. Yummy!
