Chicken Tikka Masala

Ingredients

4 persons

  • 4 chicken fillets cut into 2 cm cubes
  • 2 onions, halved and finely sliced
  • 2 tablespoons of ginger paste or freshly grated ginger
  • 1 red pepper, seeded and finely chopped
  • 1 bunch of fresh coriander (leaves kept separate, stems finely chopped)
  • 1 can ELVEA Whole Peeled Tomatoes
  • 200 milliliters coconut milk
  • grated coconut (optional, for decoration)
  • peanut oil
  • 1 Tikka Masala pasta see recipe – about 150 gr

Preparation

    Heat 2 tbsp of peanut oil in a heavy-bottomed pan and fry the onion, red pepper, ginger, and coriander sprigs in it over low heat until the onion is translucent.

    Add the chicken cubes and sear them.

    Now add the tikka masala paste* and make sure the chicken is nicely coated all over.

    Add the tomatoes and mash them with a fork. Stir in the coconut milk and let it simmer for about 20 minutes on a low heat until the chicken is cooked through and the sauce has thickened slightly.

    Season with some salt and pepper and mix half of the coriander leaves into the mixture.

    Serve with rice or naan bread and optionally sprinkle with some grated coconut and the rest of the coriander leaves.
