Fried scampi in tomato feta sauce

- 800 gram ELVEA Cubes
- 1 tablespoon olive oil
- 1 medium onion
- 1 handful fresh parsley
- 1 tablespoon fresh dill
- 500 grams raw scampi
- pepper
- salt
- 100 grams feta

Preheat the oven to 200° C.

Heat the oil in a spacious, oven-proof pan over medium heat. Add the onion and sauté until the onion softens. This will take 3 to 5 minutes.

Add the Cubetti with garlic and turn down the heat. Simmer for 5-10 minutes or until the juices thicken slightly.

Remove the pan from the heat. Stir in the herbs, scampi and feta, and season with salt and pepper to taste. Place the pan in the oven and bake, uncovered, until the scampi are cooked. This takes about 10 to 12 minutes.

Serve immediately. Serve with French or Italian baguettes, pasta or rice.
