Pizza with figs and gorgonzola

- 200 grams of flour
- 1 tablespoon olive oil
- pinch of salt
- 1 teaspoon sugar
- 20 grams fresh yeast
- 14 cups of water

- 2 tablespoons balsamic vinegar
- Sage leaf
- 3 figs
- 50 grams pine nuts
- 100 grams of gorgonzola
- pepper

Sprinkle the flour onto your work surface and make a well in the center. Mix in the olive oil, salt, and sugar. Dissolve the fresh yeast in the water and pour the yeast mixture into the flour. Knead the mixture by hand until it forms a homogeneous and smooth dough. Roll the dough into a ball, cover with a clean kitchen towel, and let it rise for at least 90 minutes in a warm place, or overnight in the refrigerator, covered with plastic wrap.

Roll out the dough just before baking and flatten it with your fingertips to the desired thickness. Start in the center and work towards the edges, rotating the pizza as you go. Preheat the oven to 200°C.

Slice the onion into strips and lightly sauté them in a little oil. Deglaze with balsamic vinegar. Spoon the "pizza a casa" onto the base. Finely chop the sage and sprinkle it over the base. Cut the figs into sixths and place them on the base along with the onion. Sprinkle with pine nuts. Crumble the gorgonzola over this and season with freshly ground pepper.

Bake for 8 minutes in the oven.
