Pizza with tomato, garlic, and parmesan

- 200 grams of flour
- 1 tablespoon olive oil
- pinch of salt
- 1 teaspoon sugar
- 20 grams fresh yeast
- 14 cups of water

- 4 cloves of garlic
- tablespoon of olive oil
- pepper
- 70 grams Parmesan cheese

Sprinkle the flour onto your work surface and make a well in the center. Mix in the olive oil, salt, and sugar. Dissolve the fresh yeast in the water and pour the yeast mixture into the flour. Knead the mixture by hand until it forms a smooth, homogeneous dough. Roll the dough into a ball, cover with a clean kitchen towel, and let it rise in a warm place for at least 90 minutes, or overnight in the refrigerator under plastic wrap.

Roll out the dough just before baking and flatten it with your fingertips to the desired thickness. Start in the center and work towards the edges, rotating the pizza as you go. Preheat the oven to 200°C.

Spread the pizza base with chopped garlic. Drizzle with olive oil and season with freshly ground pepper. Grate half of the Parmesan over it.

Bake for 8 minutes in the oven. Remove the pizza from the oven and grate the rest of the cheese over it.
