Sloppy Joe burger with animal style fries

Ingredients

Sloppy Joe burger

  • 800 grams beef neck
  • 200 grams beef belly
  • Worcestershire sauce
  • 1 dash of grapeseed oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tablespoon smoked paprika
  • 1 tablespoon of cumin powder
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sriracha
  • 1 tablespoon brown sugar
  • 100 milliliters of port
  • 500 milliliters ELVEA Passata
  • 4 brioche buns
  • 50 grams of grated cheddar
  • salt and pepper

French fries

  • 1 kg Bintje potatoes
  • 2 tablespoons crispy fried onions
  • 2 tablespoons finely chopped spring onion
  • 1 pinch of smoked paprika
  • beef tallow for frying

Cheddar Sauce

  • 25 grams of butter
  • 25 grams flour
  • 300 milliliters of milk
  • 220 grams cheddar, grated
  • pepper, salt, and nutmeg

Preparation

    Cut the beef neck and beef belly into cubes. Season with pepper, salt, and a few drops of Worcestershire sauce. Grind the meat coarsely into minced meat and mix lightly.

    Heat grapeseed oil in a pan and brown the minced meat well. Add the onion and garlic and sauté until translucent.

    Add the smoked paprika, ground cumin, Sriracha, and brown sugar. Deglaze with the soy sauce and port, and let it reduce until almost all the liquid has evaporated.

    Add the ELVEA Passata and season with pepper and salt. Let it simmer gently for 10 to 12 minutes until you get a smooth minced meat mixture.

    Peel the potatoes and cut them into thin fries. Soak them briefly in ice water and pat them dry thoroughly. Poach them for 10 minutes at 145 °C in beef stock, drain them, and then place them in the freezer for 30 minutes.

    Melt the butter in a saucepan. Add the flour and let it cook for about 1 minute. Whisking continuously, add the milk and stir until you have a smooth sauce. Remove from the heat and mix in the cheddar. Season with pepper, salt, and nutmeg.

    Slice the brioche buns open and toast the insides until golden brown in a pan with a little grapeseed oil.

    Spoon the minced meat mixture onto the bottom halves of the buns. Sprinkle with grated cheddar cheese and briefly grill in an oven at 200 °C until the cheese has melted.

    Fry the fries a second time at 175 °C until they are crispy. Drain and season with salt.

    Serve the burgers with the fries. Spoon the cheddar sauce over the fries and finish with spring onion, crispy onions, and smoked paprika powder.
