Ingredients

4 persons

  • 700 gram ELVEA Plain Passata
  • 1 pinch celery salt
  • 1 pinch of pili pili
  • 1 shot gin
  • 7 basil leaves
  • 400 grams yellow tomatoes
  • 1 tablespoon olive oil
  • shrimp
  • basil leaves

Preparation

    Mix the passata, add the pilipili, celery salt, gin, and vodka.

    Mix in an ice cream maker (or freeze in a glass bowl in the freezer and stir every 15 minutes with a fork).

    Mix the yellow tomatoes with a splash of olive oil and chill in the refrigerator.

    Pour a little tomato coulis into a nice bowl or deep glass and add a scoop of sorbet.

    Place the shrimp on top.

    Garnish with basil leaves.
